White Chocolate Chip Blondies
Ingredients:
1⅔ cups white flour
½ cup coconut sugar
½ cup butter, melted (I use vegan)
6 tablespoons unsweetened apple sauce
1 teaspoon baking powder
¼ teaspoon salt
2 teaspoons vanilla extract
¾ cup white chocolate chips, plus more to top
Instructions:
Preheat the oven to 350 degrees F and line a 8x8 baking dish with parchment paper,
In a bowl, mix the melted butter, coconut sugar, apple sauce, and vanilla extract.
Add the flour, baking powder, and salt, and stir just until the flour disappears (be sure to not overstir).
Fold in the white chocolate chips, and pour the mixture into your prepared baking dish. I like to sprinkle more chocolate chips to the top so that they’re visible once baked.
Bake for 25 minutes, or until a toothpick comes out clean (time may vary depending on your oven).
