Sheet Pan Shrimp Tacos


Ingredients:

  • 1 ½ lbs shrimp, peeled and deveined

  • 1-2 tablespoons olive oil

  • 1 teaspoon salt

  • 1 tablespoon chili seasoning

  • tortillas to serve

Cabbage Slaw:

  • 1 bag of cabbage slaw

  • 1 teaspoon garlic powder

  • ¼-½ cup mayonnaise

  • 1 lime, juiced

Mango Pineapple Salsa:

  • 1 mango, diced

  • 1 pineapple, diced

  • 1 bunch of cilantro, chopped

  • 1 jalapeno, diced

  • ½ red onion, diced

  • juice of 1 lime

  • 1 teaspoon salt


Instructions:

  1. Preheat oven to 450 degrees F.

  2. On a baking sheet, toss the shrimp with olive oil, salt, and chili seasoning. Arrange in a single layer, and roast for about 10 minutes, or until the shrimp is cooked.

  3. In a large bowl, mix the cabbage slaw, garlic powder, mayonnaise, and lime juice. Taste and add salt as needed.

  4. To make the mango pineapple salsa, add everything to a small bowl and toss. Adjust seasonings as needed.

  5. Stuff your tortillas or taco shells with the shrimp, cabbage slaw, and salsa. I usually drizzle spicy mayo on top!
