Sheet Pan Shrimp Tacos
Ingredients:
1 ½ lbs shrimp, peeled and deveined
1-2 tablespoons olive oil
1 teaspoon salt
1 tablespoon chili seasoning
tortillas to serve
Cabbage Slaw:
1 bag of cabbage slaw
1 teaspoon garlic powder
¼-½ cup mayonnaise
1 lime, juiced
Mango Pineapple Salsa:
1 mango, diced
1 pineapple, diced
1 bunch of cilantro, chopped
1 jalapeno, diced
½ red onion, diced
juice of 1 lime
1 teaspoon salt
Instructions:
Preheat oven to 450 degrees F.
On a baking sheet, toss the shrimp with olive oil, salt, and chili seasoning. Arrange in a single layer, and roast for about 10 minutes, or until the shrimp is cooked.
In a large bowl, mix the cabbage slaw, garlic powder, mayonnaise, and lime juice. Taste and add salt as needed.
To make the mango pineapple salsa, add everything to a small bowl and toss. Adjust seasonings as needed.
Stuff your tortillas or taco shells with the shrimp, cabbage slaw, and salsa. I usually drizzle spicy mayo on top!
