Summer Salad
Ingredients:
1 pint cherry tomatoes, halved
5 ounce container of arugula
4-5 peaches, sliced
½ cup crumbled feta
¼ cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon agave
½ tsp sea salt
Balsamic glaze (optional)
Instructions:
In a cup or bowl, combine the olive oil, balsamic vinegar, agave, and salt. Taste and adjust based on preference.
In a large bowl or on a platter, toss the dressing with the arugula and cherry tomatoes. Top with the peach slices and crumbled feta.
Optionally, drizzle with store-bought balsamic glaze.
