Summer Salad


Ingredients:

  • 1 pint cherry tomatoes, halved

  • 5 ounce container of arugula

  • 4-5 peaches, sliced

  • ½ cup crumbled feta

  • ¼ cup olive oil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon agave

  • ½ tsp sea salt

  • Balsamic glaze (optional)


Instructions:

  1. In a cup or bowl, combine the olive oil, balsamic vinegar, agave, and salt. Taste and adjust based on preference.

  2. In a large bowl or on a platter, toss the dressing with the arugula and cherry tomatoes. Top with the peach slices and crumbled feta.

  3. Optionally, drizzle with store-bought balsamic glaze.
