Oreo Brownies


Ingredients:

  • 1 cup melted butter (I used Myoko’s vegan butter)

  • 2 cups coconut sugar

  • 4 eggs

  • 1 1/2 cups cocoa powder

  • 3/4 teaspoon salt

  • 2 teaspoons vanilla

  • 2/3 cup all-purpose flour

  • 20 double stuffed Oreo cookies, crumbled into pieces (I put them in a ziplock bag to crush them)

  • 4-5 Oreo cookies to top, optional


Instructions:

  1. Preheat oven to 350 degrees F and line a brownie pan with parchment paper.

  2. Melt the butter in the microwave. Add the sugar, whisk together, and microwave for another 15-20 seconds, until the sugar looks more dissolved.

  3. Add the eggs and vanilla, and whisk.

  4. Add the cocoa powder, flour, and salt, and mix until smooth.

  5. Add 20 Oreo cookies to a ziplock bag, and crush into small pieces.

  6. Add the crushed Oreos to the batter, and bake for 45-50 minutes, or until a toothpick comes out clean.
