Oreo Brownies
Ingredients:
1 cup melted butter (I used Myoko’s vegan butter)
2 cups coconut sugar
4 eggs
1 1/2 cups cocoa powder
3/4 teaspoon salt
2 teaspoons vanilla
2/3 cup all-purpose flour
20 double stuffed Oreo cookies, crumbled into pieces (I put them in a ziplock bag to crush them)
4-5 Oreo cookies to top, optional
Instructions:
Preheat oven to 350 degrees F and line a brownie pan with parchment paper.
Melt the butter in the microwave. Add the sugar, whisk together, and microwave for another 15-20 seconds, until the sugar looks more dissolved.
Add the eggs and vanilla, and whisk.
Add the cocoa powder, flour, and salt, and mix until smooth.
Add 20 Oreo cookies to a ziplock bag, and crush into small pieces.
Add the crushed Oreos to the batter, and bake for 45-50 minutes, or until a toothpick comes out clean.
