Caramelized Onion Pasta


Ingredients:

  • 2 large or 3 medium yellow onions, sliced

  • 1/4 cup butter (I use Miyoko’s vegan butter)

  • 1/2 cup white wine

  • 3 cups vegetable broth

  • 1 teaspoon Worcestershire sauce

  • 1 tablespoon fresh thyme

  • 10 oz pasta (gluten free works too)

  • 1/4 cup regular or vegan parmesan cheese

  • 1/4 cup nutritional yeast (optional)

  • salt & pepper, to taste


Instructions:

  1. Melt the butter in a large saucepan and add the onions to cook on low to medium heat until caramelized and brown, for about 1 hour, stirring every 5-10 minutes to prevent the onion from sticking to the pan.

  2. Add the wine, vegetable broth, worcestershire sauce, and thyme, and bring to a boil.

  3. Once the water is boiling, add the pasta. Cover the pan, and turn to low heat. Let simmer for 10-12 minutes until the pasta absorbs the broth.

  4. Once the broth is absorbed, stir in the vegan (or regular) parmesan cheese and the nutritional yeast, if using.

  5. Optional: add a splash of vegan cream or regular cream if you want it more creamy!
