Apple Crumb Cake


Ingredients:

Cake:

  • ½ cup (113g) or 1 stick butter, melted*

  • 1 cup (200g) granulated sugar

  • 1 egg

  • ¾ cup (170g) sour cream or Greek yogurt*

  • 1 tablespoon vanilla extract

  • ⅔ cup (160mL) buttermilk (or dairy-free milk + 1 teaspoon apple cider vinegar)

  • 3 cups (375g) all-purpose flour

  • 1 ½ teaspoons cinnamon

  • ¼ teaspoon nutmeg

  • 1 ½ teaspoons baking powder

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • 2 medium to large apples, diced

Crumble:

  • ¾ cup (170g) or 1 ½ sticks butter, melted*

  • ¾ cup (150g) brown sugar

  • ¼ cup (50g) granulated sugar

  • 1 ½ cups (190g) all-purpose flour

  • 1 tablespoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon salt

Drizzle (optional):

  • ½ cup (60g) powdered sugar

  • splash milk*

To make dairy-free: I have made this dairy-free and it tastes just as good! Substitute the butter with vegan butter (I use Earth Balance sticks), the sour cream or Greek yogurt with dairy-free sour cream or yogurt (I use Kite Hill sour cream), and the milk with dairy-free milk.


Instructions:

  1. Preheat the oven to 350°F and grease or line a 9x13 baking dish with parchment paper.

  2. Make the crumble topping: In a small bowl, melt the butter or dairy-free butter. Add the sugars, flour, cinnamon, nutmeg, and salt. Use a fork to mix just until large crumbles form. Refrigerate.

  3. Next, make the cake: In a large bowl, melt the butter or dairy-free butter. Add the sugar to the warm butter and mix together. Add the egg, sour cream or Greek yogurt (or your dairy-free substitute), and vanilla extract.

  4. Add the buttermilk. If subbing dairy-free milk, add the dairy-free milk along with 1 teaspoon of apple cider vinegar.

  5. In a medium bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Fold the dry ingredients into the wet ingredients and mix until combined (be careful to not overmix!).

  6. Pour the batter into your greased or lined baking dish and spread evenly. Scatter the diced apples on top and press them down into the batter. Cover with the refrigerated crumble.

  7. Bake for 45-55 minutes, depending on your oven, or until a toothpick comes out clean or mostly clean.

  8. Optional drizzle: Once the cake is cool, mix the powdered sugar with a splash of milk in a small cup or bowl with a spoon. Drizzle on top before slicing and serving.
