‘Healthier’ Chocolate Chip Cookies
Ingredients:
1 egg
1/4 cup melted coconut oil or dairy free butter
1/2 cup coconut sugar
1 teaspoon vanilla
3/4 cup almond flour
1/2 cup rolled oats (gluten free if needed)
1/2 cup unsweetened shredded coconut
½ teaspoon baking soda
¼ teaspoon salt
3/4 cup chocolate chips
Maldon salt to sprinkle on top, optional
Instructions:
Preheat oven to 350 degrees F.
In a medium bowl, whisk together the egg, the melted coconut oil or butter, the coconut sugar, and the vanilla extract.
Add in the almond flour, rolled oats, shredded coconut, baking soda and salt. Mix until well combined. Fold in chocolate chips.
Use a cookie scoop and place about a tablespoon’s worth of dough onto the cookie sheet. I roll each one into a circle with my hands so that they come out of the oven perfectly round.
Bake for 8-12 minutes, depending on your oven. I take them out before they look ‘done.’ Sprinkle with Maldon salt (or another flaky sea salt) right as they come out of the oven.
